Kouchi-ken 高知県: Suigei 酔鯨

This is a very blurry picture of Kouji 麹 (Aspergillus Oryzae) being cultivated on steamed rice. Kouji is a kind of fungus or mold which is used to convert the starch in rice into the glucose which yeast needs to ferment into alcohol.

This image is so blurry because the room was extremely humid and covered my lens with a fine coating of fog. If this photo were more clear, you'd see a white sheet covering a large tray of rice. The smell of the air was sweet and quite pleasant.
